Mad Steak Skewers
Recipe by Chandler Garrett
First, soak skewers in water (30 min for wooden or 1 hr for bamboo)
Make Marinade:(for every pound of steak), you need:
2 Chipotle peppers in a little adobo sauce, if possible. If not, roast
Jalapeno peppers til black and peel skins off.
1/3 cup lemon juice1/3 cup olive oil (whisk it in when adding)
1 chopped garlic clove
2-3 tbsp of powdered Adobo seasoning
2 tbsp of Mad Anthony's Mild Sauce or 1 tbsp of Mad Anthony's HOT sauce
Whisk together the lemon juice and olive oil.
Chop peppers and add them and all remaining ingredients.
Slice steak (try to use flank steak or Fajita type steak) against the
grain of the meat into strips about 1/2 thick and the length of your finger.
Put steak and marinade in a ziploc bag and let sit for 30 min to 1 hour.
Remove steak from bag and skewer loosely on the skewers (the "longer"
you make the meat on the skewers, the quicker they cook due to surface
area exposed). Grill them on high for about 3 minutes a side. They should
cook pretty quick. Take them off and let them sit for a couple of minutes
(they'll continue to cook a little after you take them off the heat.
Have a cold beer nearby and chow down!!!!
